My wonderful fiance gifted me an awesome baking book for Christmas, it is full of cookie recipes...all of them categorized according to the 4 seasons of the year...so needless to say I will be sharing with you these amazing recipes, I want you to enjoy the magic of baking from scratch!
Our first recipe...Toffee Crunch Cookies
Prep Time: 20 min
Baking Time 15 min
1 cup butter, (2 sticks)
1 cup granulated sugar
1 cup light brown sugar
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 bag toffe candy bits (8 to 10 once bag)
1 cup oatmeal
1 cup sweetened flake coconut
1 cup whole almonds; skinned and chopped
1. Preheat oven to 350F.
2. Cream together the butter, sugars and vanilla. Beat the eggs slightly, then add butter mixture and mix well, until lught and fluffy. In a separate bowl, sift flour, salt and baking soda; then add slowly butter and sugar mixture, mixing thoroughtly. Mix in the toffee bits, oatmeal, coconut and nuts.
3. Drop dough by teaspoonful onto an ungreased baking sheets and bake for 15 minutes. Transfer to wire rack, cool. Store in air tight container.
