Key Lime Cupcakes

Super Bold Citrus flavor in this easy to make recipe!!


Cupcakes
1box Betty Crocker® SuperMoist® lemon cake mix
1box (4-serving size) lime-flavored gelatin
3/4cup water
1/3cup Key lime juice
1/3cup vegetable oil
3eggs
2or 3 drops green food color, if desired
Glaze
1cup powdered sugar
2to 2 1/2 tablespoons Key lime juice
Frosting
1package (8 oz) cream cheese, softened
1/4cup butter or margarine, softened
1teaspoon vanilla
3 1/2cups powdered sugar

Grated lime peel, if desired

1.Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups. In large bowl, beat cake mix and gelatin with electric mixer on low speed 30 seconds. Add remaining cupcake ingredients. Beat with electric mixer on low speed 30 seconds; beat on medium speed 2 minutes, scraping bowl as necessary. Divide batter evenly among muffin cups, filling each about 2/3 full.
2.Bake 17 to 22 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan to cooling rack. With toothpick or wooden skewer, pierce tops of cupcakes in several places.
3.In small bowl, mix 1 cup powdered sugar and enough of the 2 to 2 1/2 tablespoons lime juice until glaze is smooth and thin enough to drizzle. Drizzle and spread glaze over cupcakes. Cool completely, about 30 minutes.
4.In large bowl, beat cream cheese and butter on medium speed until light and fluffy. On low speed, beat in vanilla and 3 1/2 cups powdered sugar until mixed; beat on medium speed until fluffy. Frost cupcakes, mounding and swirling frosting in center. Garnish with lime peel. Store covered in refrigerator.
High Altitude (3500-6500 ft): Bake 19 to 24 minutes.

Food Trucks Love

I read this article about food trucks trend on Delish.com I think it is a very interesting an innovated way to attract people for a quick snack or a full meal!! I was amazed with all the different types of food that are sold on these trucks!!...adults are going crazy about them...just like the little kid chasing the ice cream truck!

The menu changes according to the season, but one selection remains: the grass-fed beef burger, topped with arugula, cambazola (a cow's milk cheese with French triple cream and tangy Italian Gorgonzola), and bacon jam (yes!), nestled in a soft bun and served with a side of hand-cut French fries.

Mimosa Cupcake Recipe

One of my favorite cocktail drinks is Mimosa...a mix of champagne and chill orange juice!...so happy I found this recipe for Mimosa cupcakes at the Food Channel, you must try them this summer :)



Ingredients

  • 3 cups cake flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup (2 sticks) butter
  • 1 cup sugar
  • 1/2 cup + 2 tablespoons frozen orange concentrate
  • 3 eggs
  • 3/4 cup plain yogurt
  • FOR CHAMPAGNE SYRUP:
  • 2 cups champagne
  • 1 cup powdered sugar
  • FOR CHAMPAGNE FROSTING:
  • 1 cup chilled whipping cream
  • 8 ounces mascarpone
  • 2 to 3 cups confectioner's sugar (depending upon how thick you prefer frosting)
  • 8 drops of champagne flavor (use an eye dropper)

Preparation


  • 1. Preheat your oven to 350°F.

  • 2.  Mix together the flour, salt, baking soda and powder and set aside. In a medium sized bowl, cream the butter until smooth then add the sugar and cream together. Once the butter and sugar are creamed add in the orange juice concentrate.

  • 3. Mix in one egg at a time. Add in flour mixture 1/3 at a time. When flour is thoroughly mixed, mix in the yogurt. Batter will be slightly lumpy, but should be smooth kind of like pancake batter.

  • 4. Divide the batter evenly into lined cupcake tins and bake for about 15-20 minutes. Allow to cool.

  • 5. FOR THE CHAMPAGNE SYRUP: Bring the champagne and powdered sugar to a boil and let them reduce about half way. Don't expect it to get thick. It will still be very liquidy when you are done. Poke holes in the cupcakes and drizzle in the syrup. Let it absorb into the cupcake and add more. Keep adding to taste.

  • 6. FOR THE CHAMPAGNE FROSTING: Whip up whipping cream in mixer until soft peaks begin to form. Fold in mascarpone. Then, while mixing over low speed, slowly add the confectioner's sugar one cup at a time, being careful not to over whip frosting. Mix in the champagne flavor.
